Abstract

Natural compounds such as plant polyphenols and flavonoids have the potential to scavenge free radicals, reduce metal ions, and inhibit oxidative chain reactions. This paper analyzes the mass-transfer mechanisms and applicability boundaries of solvent extraction, ultrasound-assisted extraction, microwave-assisted extraction, and supercritical-fluid extraction. It discusses the effects of solvents, temperature, and energy input on extraction yield and activity retention and compares the DPPH, ABTS, and FRAP antioxidant assays. The findings indicate that process development should pursue multiple objectives, including compound recovery, antioxidant activity, solvent safety, and energy efficiency, and should establish an integrated quality-control system covering the entire process from raw materials to finished products.
